Quinoa with stir fried veggies

  1. Quinoa-1cup
  2. Bell peppers- 100g(cut into small cubes)
  3. Carrots-100g(cut into small cubes).
  4. French beans-100g(1inch small pieces)
  5. onions-50g(thinly sliced)
  6. Tomato-2medium sized(1cut into cubes and 1chopped finely).
  7. Cherry tomatoes(8-10pcs)(cut into halves).
  8. Sliced almonds(1-2tsp)
  9. Black raisins(1-2tsp).
  10. Sunflower seeds(1-2tsp).
  11. Sun dried tomato-2-3small pcs cut into thin slices.
  12. Olives-4-5 pcs (cut into small thin circles).
  13. Paneer cubes-250g
  14. garlic-2-3cloves (minced).
  15. Seasoning- Chili flakes, oregano, sea salt, lemon juice, extra virgin olive oil, freshly crushed black pepper.
  16. Chaat Masala.
  1. 1. Cook quinoa as per instructions on the pack.
  2. 2. Stir fry chopped garlic, onions, french beans, carrots, bell peppers, add finely chopped tomatoes and stir for 2-3 mins. Add paneer cubes, add salt, black pepper powder. Cover cook for another 2mins on low flame. Add chaat masala
  3. 3. In a separate bowl add quinoa, cooked vegetables, add tomato cubes, cherry tomatoes, sun dried tomatoes, olives. Add seasoning, add sliced almonds, sunflower seeds, black raisins and toss well.
