Ingredients

Beetroot kebab need following ingredients:-

  • medium-sized beetroot, peeled and grated 1
  • chickpea flour 2 tbsp.
  • finely chopped onions 2 tbsp.
  • ginger-garlic paste 1/2 tsp
  • chopped coriander leaves 1/2 tsp
  • cumin powder 1/4 tsp
  • coriander powder 1/4 tsp
  • garam masala 1/4 tsp
  • Salt to taste
  • 1 tsp oil

 


Instructions

  1. In a small mixing bowl, combine the grated beetroot, chickpea flour, onions, ginger-garlic paste, coriander leaves, cumin powder, coriander powder, garam masala, and salt. Mix well until all the ingredients are well combined.
  2. Shape the mixture into 3-4 small kebabs using your hands.
  3. Heat oil in a non-stick frying pan over medium heat. Once the oil is hot, place the kebabs in the pan and cook for 3-4 minutes on each side or until they are golden brown and crispy.
  4. Serve hot with your favorite chutney or sauce.

Notes

  • You can also bake these. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly brush it with oil. Place the kebabs on the baking sheet, leaving some space between them. Brush the kebabs with oil, and bake them in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
  • You can also add other vegetables like carrots or zucchini to the kebab mixture for added flavor and nutrients.

This Sweet potato and chickpeas kebab is a healthy and nutritious kebab recipe made with sweet potatoes, legumes, spices and herbs.You can serve it as a snack or even as a light Breakfast/lunch/dinner meal option with a side of a heart bowl of vegetable soup or salad. Serve theses kebabs along with a dip or sauce of your choice.



Instructions

  1.  Overnight soak chick peas in water.
  2.  Pressure cook them till they are soft, drain and keep aside.
  3.  Boil sweet potatoes, peel and mashed them thoroughly.
  4.  Mash green peas and chick peas in a grinder.
  5. Grind ginger and chili into paste.
  6.  Heat 2tsp oil in a pan. Add ginger chili paste and sauté foe 2 minutes. Add gram flour and sauté for 5-7 minutes till it is roasted.
  7.  Add green peas and chick peas paste, add mashed potatoes. Saute for another 5 minutes.
  8.  Add roasted cumin powder, black pepper and salt to taste, lemon juice and mix well.
  9.  Let the mixture cool down. Divide the mixture in five portions. Make six kebabs of each portion.
  10. Heat 2tsp oil in a grill- pan. Place the kebabs on it and cook for 2 minutes on each side.
  11.  Serve hot with coriander chutney and tamarind chutney and some salad on side.

Description

Hara bhara kebabs are vegetarian kebabs made using fresh ingredients. It is a quick energy boosting snack which can can also serve as a starter, or side dish or even part of a light dinner option.

Ingredients

¼ bunch spinach leaves

1/2 tsp oil

12 green chili, finely chopped

¼ capsicum, finely chopped

¼ cup beans, chopped

1 tbsp. peas, fresh / frozen

½ potato, boiled and grated

1 tbsp. paneer / cottage cheese, crumbled

1 tbsp coriander leaves, finely chopped

¼ tbsp corn flour

½ tbsp breadcrumbs

½ tsp red chili powder

½ tsp coriander powder

¼ tsp amchur

¼ tsp garam masala powder

salt to taste

½ cup breadcrumbs, to coat

2 cashews, halved

oil for greasing


Instructions

  1. Firstly, in a large kadhai heat oil and add green chili, also add capsicum and sauté till the moisture disappears. Further add beans and peas. sauté well.
  2. Transfer to the blender and allow to cool completely. Blend to coarse paste along with blanched spinach. Transfer the blended paste into a large mixing bowl.
  3. Also add grated potato, paneer and coriander leaves. Further add corn flour and breadcrumbs. Add in the spices and salt. Mix well.
  4. Grease hands with oil and make a small patty. Cover the patties with bread crumbs and garnish with cashew.
  5. Now AIR FRY the prepared patties (stirring occasionally).
  6. Finally, serve hara bara kabab with coriander chutney.
